Ingredients (10)

330.00 g mandarin — segments, drained
60.00 g milk chocolate — chopped
125.00 ml butter
190.00 ml white sugar
1.00 orange — zest and juice
250.00 ml flour — self-raising
30.00 ml milk
CHOCOLATE SAUCE
180.00 g milk chocolate — broken into squares
75.00 ml soft brown sugar
250.00 ml water

Method:

Preheat the oven to 170 ºC and grease a 20 x 22 cm oven dish with butter or margarine, or spray with non-stick spray. Arrange half the mandarin segments in the bottom of the dish. Place the chocolate in a glass bowl and melt over a saucepan with boiling water or in the microwave, stirring frequently. Cream the butter and sugar until light and fluffy. Add the orange rind and melted chocolate, beating well. Fold the self-raising flour into the butter mixture, alternating with the milk and orange juice. Turn half the batter into the dish, arrange the remaining mandarin segments on top and spoon the remaining batter over. Bake for about one hour. Heat the chocolate, brown sugar and water for the sauce over low heat until the sugar has dissolved and the chocolate has melted. Stir continuously. Bring to the boil and simmer gently for about 20-30 minutes until fairly thick. Serve with the pudding.
