Ingredients (12)

75.00 g cottage cheese — creamed
30.00 ml castor sugar
3.00 bananas — mashed
180.00 ml sugar
1.00 eggs — extra-large, whisked
80.00 ml butter — melted
375.00 ml flour — cake
45.00 ml cocoa powder
5.00 ml Baking powder
5.00 ml Bicarbonate of soda
salt — just a pinch
icing sugar — for dusting

Method:

Preheat the oven to 190 ºC (375 ºF). Spray a 12-hollow muffin tin with non-stick spray.
Beat the creamed cottage cheese and castor sugar until well blended. Set aside.
Mix the mashed banana, sugar, egg and melted butter well. Sift together the cake flour, cocoa, baking powder, bicarb and salt in a large mixing bowl. Add the banana mixture and mix lightly until just blended. Fill each muffin hollow halfway and spoon a teaspoonful of the cottage cheese mixture on top. Spoon more of the muffin batter on top until the muffin hollows are three-quarters full. Bake for 10-12 minutes or until a skewer inserted comes out clean). Cool in the tin before turning out onto a wire rack to cool completely. Dust with icing sugar if desired.
Makes 12 muffins.
