Chinese vegetable and tofu stir-fry

    sunflower or sesame oil or more as needed)

    cashew nuts

    sesame seeds
  • 250

    fresh oyster or fresh button mushrooms
  • 500

    bok choy or spinach, coarsely chopped
  • 200

    sugar snap peas
  • 100
    g
    green beans, trimmed and left whole
  • 200

    Chinese cabbage, coarsely chopped
  • 10
    ml
    grated ginger
  • 10
    ml
    crushed garlic
  • 200
    g
    tofu, cubed
  • plum or oyster sauce to taste
 

Method

 
Heat oil in a large wok or frying pan until very hot. Add all ingredients except tofu and plum sauce. Stir-fry quickly until vegetables have wilted, about 5 minutes. Add tofu and plum sauce and heat through. Serve with Chinese noodles or rice.
