Chinese chicken stir-fry

Chinese chicken stir-fry

    peanut or sunflower oil
  • 4
    chicken breast fillets, sliced
  • 250
    button mushrooms, sliced
  • 5
    spring onions, chopped
  • 15
    garlic, crushed
  • 15
    ginger, grated
  • 300
    mixed veggies, cut into bite-sized pieces
  • 100
    soya sauce (or to taste)
  • 250
    capellini pasta or Chinese noodles, cooked


20 minutes
Heat half the oil in a wok or large frying pan and fry the chicken pieces for two to three minutes until just cooked through.
Remove from the pan and set aside.
Heat the remaining oil and sauté the mushrooms for about three minutes.
Add the spring onions, garlic and ginger and stir-fry for one minute.
Add the remaining vegetables and cook until they are just tender.
Add the chicken, soya sauce and pasta and heat through.
Serve garnished with fresh coriander.
