Ingredients (9)

1.00 kg sweet potatoes — scrubbed
MARINADE
100.00 ml fresh chillies — 573
60.00 ml honey — or syrup
1.00 lemon juice
2.00 garlic — cloves, crushed
0.00 fresh rosemary — chopped
2.00 red chilli — deseeded and finely chopped
1.00 onion — small, finely sliced
0.00 salt and freshly ground back pepper

Method:

Preheat oven to 180 &degC.
Cut sweet potatoes into bite-sized chunks.
Coat with marinade and leave to stand for at least 30 minutes.
Roast, tossing often, until sticky and golden.
Serve as a salad or as a hot vegetable accompaniment.
