Ingredients (13)

150.00 g brown mushrooms — sliced
150.00 g oyster mushrooms — quartered
100.00 g button mushrooms — sliced
45.00 ml onion — finely chopped
2.00 garlic — cloves, crushed
25.00 ml sugar
10.00 ml dried chilli
15.00 ml fresh chillies — 573
45.00 ml lemon juice — or fresh lime juice
30.00 ml fish sauce
250.00 ml fresh mint
lettuce — cos or butter
2.00 red chilli

Method:

Put mushrooms and onions in a wide saucepan. Add boiling water to cover. Simmer for four minutes and drain.
Pound garlic, sugar and chilli to a paste. Add oil, lemon or lime juice and fish sauce, mixing well.
Transfer the mushrooms to a bowl. Pour over dressing. Add mint leaves and gently toss everything together.
Arrange the lettuce leaves on a platter and top with mushroom salad. Serve at room temperature, garnished with slices of fresh chilli.
