Chilli calamari and oven-roasted chips

  • potatoes, cut into thin matchsticks
  • olive oil
  • a small knob of butter
  • a sprinkling of paprika
  • 4
    calamari steaks
  • 45
    olive oil
  • 4
    garlic cloves
  • 2
    red chillies, chopped
  • 45
    chopped Italian parsley

30 minutes
First make the chips. Preheat the oven to 180 °C.
Place the potatoes on a baking sheet and spray with olive oil, using a mister.
Place the butter on top and sprinkle with paprika.
Bake for 30 minutes or until crisp.
Ten minutes before the chips are ready, lightly score the calamari steaks in a criss-cross pattern, using a sharp knife.
Pat them dry with paper towels.
Heat the olive oil in a frying pan until very hot, then cook the steaks, one at a time, for a few minutes on each side.
At this stage they should have curled up.
YUMMY BUTTERMelt together the ingredients and serve with the calamari and chips.
