Chilli bites

Ingredients (10)

750 ml oil — for deep frying
125 ml chickpea flour
75 ml soya flour
50 ml rice flour
25 ml flour — self-raising
5 ml fennel seeds — roasted and crushed
5 ml coriander — seeds, roasted and crushed
5 ml salt
1-2 fresh chillies — finely chopped
50 ml spring onions — finely chopped

Method:

Place the oil in a wok or deep frying pan on the stove to heat up (medium heat).

Sift the various flours into a large mixing bowl-ensuring that they are well combined.

Add the seed spices, salt, chilli, onion and spring onions.

Using the water (add more if necessary) make a batter of dropping consistency.

Once the oil is ready, drop about ½ teaspoon batter into the oil and if it comes up quickly your oil is ready.

Take about 2 tablespoons of the hot oil and pour over your batter and mix thoroughly.

Now you can drop spoons full of batter into the hot oil and allow to cook for a few minutes till golden brown-remove with a slotted spoon.

Serve with a tomato and chilli sauce or use as above in the chickpea curry.
