Chilli and vanilla syrup with fresh mango

    vanilla bean, split lengthways
  • 1
    large red chilli, seeded and finely chopped
  • 500
  • 1
    lime, juice of
  • 3
    mangoes, peeled and cut into wedges


15 minutes
Place sugar, vanilla bean, chilli and water into a small saucepan.
Bring to the boil, then reduce heat to allow to simmer for 15 minutes.
Allow to cool, then stir in the lime juice.
Divide mango between four chilled bowls and top with scoops of lime or lemon sorbet (buy or make your own).
Drizzle over chilli syrup and serve immediately.
