Chilled gingered melon soup shots

  • juice of 3 oranges
  • juice of 2 lemons
  • 30

    knob ginger, peeled and finely chopped
  • 1
    small sweet melon (spanspek)


Bring the orange and lemon juice, honey and ginger to the boil in a saucepan. Remove from the heat, cover and set aside for about 20 minutes for the flavours to infuse.

Peel and seed the melon, cut into chunks and pop them into a food processor. Strain in the orange juice mixture and whizz until the soup is smoothly blended. Chill before serving in shot glasses.
