Ingredients (9)

2.00 cucumber — English variety, peeled, chopped
500.00 ml yoghurt — natural
5.00 ml coriander — ground
10.00 ml lemon juice
15.00 ml fresh parsley — chopped
5.00 ml fresh mint — chopped
cucumber — English variety, diced, to garnish
CORIANDER OIL
fresh coriander — handful
125.00 ml fresh chillies — 573

Method:

CORIANDER OIL: Place coriander and olive oil in a blender and purée until very smooth. Set aside.
SOUP: Purée cucumbers and yoghurt in a blender until smooth. Add remaining ingredients, except garnish, and blend until combined. Chill.
Serve soup drizzled with coriander oil and diced cucumber.
