Chickpea salad

Ingredients (7)

2 chickpeas — tinned, drained and rinsed
1/2 red onion — finely sliced
1 yellow pepper — large, deseeded, cubed
180 ml pomegranate rubies
100 g feta cheese — crumbled
10 g pea shoots
salt and freshly ground black pepper — to taste

Method:

Mix all the ingredients together.
Let the salad stand for 15 to 30 minutes.
Season with salt and pepper and serve at room temperature.

Serves 4-6.
