Ingredients (11)

1.00 lemon — zest and juice
2.00 garlic — cloves, crushed
30.00 ml castor sugar
10.00 ml dried oregano
2.00 ml cayenne pepper
3.00 ml cinnamon — ground
4.00 chicken breast fillets — thinly sliced
50.00 ml fresh chillies — 573
2.00 onion — sliced
1.00 yellow pepper — cut into strips
30.00 ml pumpkin — seeds, toasted

Method:

Mix the lemon juice and rind, garlic, castor sugar, herbs and spices.
Add the chicken and marinate for at least half an hour.
Heat half the oil over a high heat in a frying pan and fry the chicken in two batches for a few minutes, until just cooked through.
Remove from the pan and set aside.
Heat remaining oil and fry the onions for two minutes; then add the pepper and stir-fry until browned and tender.
Return chicken to the pan and stir to heat through.
Serve sprinkled with pumpkin seeds.
