Chicken with Parmesan herb stuffing

  • 4
    chicken breasts
  • olive oil
  • chicken stock powder
  • 50
  • 40
    grated Parmesan cheese
  • 15
    chopped fresh parsley
  • 15
    fresh basil or thyme
  • salt and milled pepper


Use a sharp knife to make a 5-6 cm slit in thickest part of each breast. Set aside. STUFFING: Mash all ingredients together with a fork. Divide mixture into 4 portions and insert a portion in the slit of each chicken breast. Brush breasts with oil and sprinkle with a little stock powder. Place on a baking sheet and bake in a preheated 200 ºC oven for 30 to 35 minutes, or until nicely browned and cooked through. Serve with roasted baby potatoes (which need about 25 minutes in the same temperature oven) and a salad.
