Chicken with Parmesan herb stuffing

Ingredients (8)

4.00 chicken breast fillets
fresh chillies — 573
stock powder — chicken
STUFFING
50.00 ml butter
40.00 ml parmesan cheese — grated
15.00 ml fresh parsley — chopped
15.00 ml fresh basil — or thyme
salt and freshly ground black pepper

Method:

Use a sharp knife to make a 5-6 cm slit in thickest part of each breast. Set aside.
STUFFING: Mash all ingredients together with a fork. Divide mixture into 4 portions and insert a portion in the slit of each chicken breast. Brush breasts with oil and sprinkle with a little stock powder.
Place on a baking sheet and bake in a preheated 200 ºC oven for 30 to 35 minutes, or until nicely browned and cooked through.
Serve with roasted baby potatoes (which need about 25 minutes in the same temperature oven) and a salad.
