Chicken satays

  • 4
    chicken breast fillets, skinned
  • 30
    soy sauce
  • 10
    brown sugar
  • 1
    lemon, juice
  • 15
  • salt and freshly ground black pepper
  • 5
    grated fresh root ginger
  • 1
    clove garlic, crushed
  • 200
    roasted peanuts
  • 4
    bamboo skewers


1. Cut the chicken fillets into bite-sized pieces. 2. Combine the soy sauce, sugar, lemon juice and oil. Add salt and pepper, ginger and garlic. Add the chicken pieces and mix. Cover and marinate for at least 4 hours, or overnight. 3. Chop nuts coarsely in a food processor and set aside. 4. Heat grill to moderately hot. Remove chicken from the marinade and thread on to the skewers. 5. Grill on each side for 3 minutes. Sprinkle with chopped nuts and serve. Serves 4
