Ingredients (6)

6.00 chicken breast fillets — skinned and deboned
65.00 ml fresh herbs — parsley, thyme, oregano and rosemary
200.00 g cheese — sliced
15.00 ml oil — or melted butter
125.00 ml cornflakes — crumbs
65.00 ml parmesan cheese

Method:

Lay each chicken breast between two layers of plastic and flatten with the back of your hand. Season with salt and pepper. Sprinkle the breasts with herbs and top with the cheese slices. Roll each breast up, securing with cocktail sticks. Mix the crumbs and Parmesan cheese. Brush the chicken breast rolls with oil or butter and roll in the crumbs. Arrange in an ovenproof dish and chill for 1 hour in the fridge. Preheat the oven to 180 ºC (350 ºF). Bake the breasts for 25-30 minutes or until done. (Pack tightly together to prevent the cheese from running out.) Serve with Tomato sauce (see recipe).
Serves 3-4.
