Chicken ratatouille

    olive oil

    chicken breast fillets, cut into 2,5 cm pieces
  • 2
    courgettes, thinly sliced
  • 1
    brinjal, cubed
  • 1
    large onion, thinly sliced
  • 1
    large green pepper, seeded and sliced

    mushrooms, sliced
  • 2
    x 410 g cans tomatoes, chopped
  • 3
    cloves garlic, finely chopped
  • 10
    vegetable stock powder
  • 5
    dried sweet basil
  • 5
    dried parsley
  • 2
    freshly ground black pepper


25 minutes
Heat the oil in a large frying pan and sauté the chicken for two minutes.
Add the courgettes, brinjal, onion, green pepper and mushrooms.
Cook for 15 minutes, or until tender, stirring occasionally.
Add the tomatoes to the pan and stir carefully.
Stir in the remaining ingredients and simmer for five minutes or until chicken is tender.
