Ingredients (13)

45.00 ml fresh chillies — 573
4.00 chicken breast fillets — chopped
2.00 courgettes — thinly sliced
1.00 aubergine — cubed
1.00 onion — large, thinly sliced
1.00 green pepper — deseeded and sliced
150.00 g mushrooms — sliced
2.00 tinned tomatoes — chopped
3.00 garlic — cloves, finely chopped
10.00 ml stock powder — vegetable
5.00 ml dried basil
5.00 ml dried parsley
2.00 ml black pepper — freshly ground

Method:

Heat the oil in a large frying pan and sauté the chicken for two minutes.
Add the courgettes, brinjal, onion, green pepper and mushrooms.
Cook for 15 minutes, or until tender, stirring occasionally.
Add the tomatoes to the pan and stir carefully.
Stir in the remaining ingredients and simmer for five minutes or until chicken is tender.
