Ingredients (13)

15.00 ml oil
1.00 onion — small, chopped
2.00 garlic — cloves, crushed
2.00 fresh chillies — finely chopped
45.00 ml peanut butter — chunky
410.00 g coconut milk
30.00 ml vinegar
30.00 ml brown sugar
15.00 ml soy sauce
15.00 ml sesame seeds — toasted
200.00 g noodles — dried egg
6.00 chicken breast fillets — cubed
8.00 spring onions — sliced

Method:

Heat the oil in a saucepan and sauté;é the onion, garlic and chillies. Add the peanut butter and cook for 30 seconds, then gradually add the coconut milk. Stir in the vinegar, sugar, soy sauce and sesame seeds and bring to the boil. Reduce heat and simmer, uncovered, for 5 minutes.
Cook the noodles according to packet instructions and drain. While noodles are cooking, bring the sauce back to the boil and add chicken. Boil for 2 minutes, or until chicken pieces are just cooked. Add the spring onion and the sauce to the drained noodles Mix and serve immediately.
Serves 4.
