Chicken 'n beans

  • 3
    cloves garlic
  • 3
    large ripe tomatoes
  • 410
    each butter and kidney beans
  • 65
    white wine
  • salt and milled pepper
  • 4
    chicken breasts
  • olive oil and chicken stock powder
  • 1
    stalk rosemary
  • 65
    olive oil (you may need more)


Preheat oven to 200 ºC.
Place onion, garlic, tomato, beans, wine and seasoning in an oven-to-table dish or roasting pan.
Rub chicken breasts (or use 8 thighs) with olive oil and sprinkle with stock powder.
Place chicken on top of bean mixture.
Add rosemary and drizzle all ingredients with olive oil.
Cover with foil, shiny-side-in, and bake for 25 minutes.
Remove foil and bake for a further 25-35 minutes or until chicken is cooked through but still moist.
