Ingredients (12)

60.00 ml fresh chillies — 573
60.00 ml lemon juice
4.00 red chilli — deseeded and chopped
500.00 g chicken breast fillets — sliced into strips
0.00 tomato sauce
410.00 g tinned tomatoes — chopped
60.00 ml sherry
0.00 salt and freshly ground black pepper
0.00 brown sugar — and honey
15.00 ml dried crushed chillies
TO FINISH
200.00 g baby potatoes — cooked, halved
0.00 salt and freshly ground black pepper

Method:

Blend the oil, lemon juice and chillies and marinate the chicken strips in the mixture for about one hour.
TOMATO SAUCE
Meanwhile, bring the tomatoes and sherry to the boil.
Season to taste with salt, pepper, sugar and honey.
Add the chillies and simmer until the sauce has reduced and is glossy. Cool
TO FINISH:
Thread the chicken strips onto the skewers, alternating with potato halves.
Season with salt and pepper.
Preheat the oven grill and brown the kebabs on both sides until golden and done, basting frequently with the marinade.
Serve with the tomato sauce.
