Ingredients (11)

500.00 g chicken breast fillets — cubed
1.00 pineapple — chunks
1.00 red pepper — cubed
1.00 instant marinade — chicken
SALSA
1.00 green pepper — large
1.00 tomatoes — chopped
50.00 ml sweet corn — cooked and drained
15.00 ml lemon juice — or fresh lime juice
15.00 ml fresh coriander — chopped
2.00 ml sugar
salt and freshly ground black pepper

Method:

Thread the chicken, pineapple and red pepper alternately on presoaked kebab sticks. Place kebabs in a shallow dish.
Mix the marinade according to the packet instructions and pour over the kebabs, making sure they’re well coated.
Grill over a medium heat for 8-10 minutes, basting with the marinade.
SALSA: Mix all ingredients together. Spoon onto serving plates.
Serve kebabs with the salsa.
