Chicken kebabs with garden salsa

    chicken breast fillets, cubed
  • 1
    pineapple, cut into chunks
  • 1
    red pepper, cut into chunks
  • 1
    packet instant chicken marinade
  • 1
    large green pepper
  • 1
    tomato, chopped
  • 50
    sweetcorn, cooked and drained
  • 15
    lime or lemon juice
  • 15
    freshly chopped coriander
  • 2
  • salt and pepper


10 minutes
Thread the chicken, pineapple and red pepper alternately on presoaked kebab sticks. Place kebabs in a shallow dish. Mix the marinade according to the packet instructions and pour over the kebabs, making sure they're well coated. Grill over a medium heat for 8-10 minutes, basting with the marinade. SALSA: Mix all ingredients together. Spoon onto serving plates. Serve kebabs with the salsa.
