Chicken in white wine

  • 30
    olive oil
  • 1
    onion, chopped
  • 3
    large garlic cloves, crushed
  • 1
    whole chicken, cut into pieces
  • salt and black pepper
  • sprigs of fresh herbs such as thyme, rosemary and oregano
  • 250
    white wine
  • 0.50
    lemon, juice
  • 10
    green olives


Heat the oil in a large frying pan and fry the onion and garlic until soft.
Add the chicken pieces, season with salt and pepper and brown.
Add the herbs and white wine.
Bring to the boil, reduce the heat and simmer until the chicken is tender and done.
Add the lemon juice and green olives and leave the chicken to cool in the liquid.
Reheat just before serving or serve cold with a green salad, olive oil and bread on the side.
