Ingredients (14)

12.00 chicken — thighs, skinned
sea salt and freshly ground black pepper
2.00 onion — finely chopped
1.00 garlic — cloves, crushed
250.00 ml water
15.00 ml curry powder — mild
3.00 ml paprika
30.00 ml jam — apricot
30.00 ml tomato sauce
20.00 ml chutney
salt — pinch
2.00 stock cube — chicken, crumbled
45.00 ml flour — cake
250.00 ml pineapple — juice

Method:

Preheat the oven to 180 ºC and spray a large ovenproof dish with non-stick spray or butter lightly for easier cleaning.
Season the chicken pieces with salt and pepper and arrange in the prepared dish.
Place the onions, garlic and water in an ovenproof dish and microwave on HIGH (100 per cent power) for 7 minutes.
Add the remaining ingredients, except the cake flour and juice.
Mix the cake flour with a little of the juice to form a smooth paste and stir into the sauce along with the remaining juice.
Microwave for 3 minutes on HIGH (100 per cent power), stir well and microwave for another 4 minutes on HIGH (100 per cent power) until the sauce thickens and is cooked through.
Season the sauce with salt and pepper to taste.
Spoon the sauce over the chicken pieces and bake for 1-1½ hours until the meat is tender and cooked.
Serve hot with buttered peas and grilled mealie meal porridge slices.
