Chicken in an apple and ginger sauce

Ingredients (11)

8.00 chicken — thighs or drumsticks
0.00 salt and freshly ground black pepper — to taste
40.00 g butter
2.00 apples — Golden Delicious, peeled, cored, sliced
60.00 ml brandy — or Calvados
20.00 ml fresh ginger — grated
250.00 ml stock — chicken
60.00 ml apple juice
60.00 ml cream
20.00 ml fresh sage — chopped
10.00 ml cornflour — mixed with water

Method:

Preheat the oven to 180 °C and then season the chicken pieces with salt and pepper.
Heat the butter in a large, deep frying pan and fry the chicken until half-done and browned all over.
Arrange the apples in the pan, add the calvados or brandy and bring to the boil.
Transfer the contents of the pan to a greased ovenproof dish.
Mix the ginger, stock, apple juice, cream and sage, add to the chicken and bake for 45 minutes.
If necessary, thicken the sauce with cornflour and water paste.
Serve with rice and a green salad.
