Ingredients (10)

6.00 chicken breast fillets
salt and freshly ground black pepper — to taste
FILLING
125.00 g cottage cheese — chunky
6.00 olives — pitted, finely chopped
30.00 ml chutney
30.00 ml mayonnaise
5.00 ml mixed herbs
2.00 button mushrooms — finely chopped
SAUCE
60.00 ml chutney
60.00 ml mayonnaise

Method:

Preheat the oven to 180 ºC (350 ºF). Season the chicken breasts with salt and pepper and sets aside.
Mix all the ingredients for the filling. Make a slit above the ribs of each chicken breast and stuff with the filling.
Place the chicken breasts in an oven pan. Blend the 60 ml mayonnaise and spoon over the chicken.
Bake for about 25 minutes or until cooked and golden brown. Serve with rice and vegetables.
