Chicken breasts with cheese and basil

6.00 chicken — pieces
salt
freshly ground black pepper
fresh basil — or dried
200.00 g mozzarella cheese — or cheddar cheese, sliced
oil — for frying

Method:

Slice the skin neatly along the sides of the chicken breasts. Using a sharp knife, cut a slit in the meaty part of each breast. Season well with salt and pepper. Finely chop fresh basil (use 5 ml if using dried) and sprinkle about 15 ml into each slit. Place the cheese slices in the slits and secure the openings with toothpicks. Heat oil in a frying pan and fry the chicken breasts until browned all over. Add a little water, cover and simmer until cooked and tender. Serve with polenta (see recipe).
Serves 4-6.
