Chicken breasts with brie, grapes and almonds

    chicken breasts, skinned and deboned

    Brie cheese, sliced
  • 80
    fresh basil, coarsely chopped
  • 1
    clove garlic, crushed
  • salt and black pepper

    black seedless grapes, halved

    coarsely chopped almonds

Preheat the oven to 220 ºC. Make a slit in the thicker section of each chicken breast and fill with the Brie, basil and garlic. Secure with cocktail sticks and season with salt and pepper. Fry the breasts in heated butter until golden brown and transfer to an ovenproof dish. Pour the stock and cream into a pan and heat until the mixture comes to the boil. Pour over the chicken breasts and season generously with salt and pepper. Add the grapes and almonds and bake for 15-20 minutes or until tender and done. Serve hot with pasta and any crunchy green vegetables. Serves 4.
