Chicken breasts with blue cheese and rosemary

  • 4
    chicken breasts, with skin and bone
  • 85
    blue cheese, mashed
  • 65
  • 30
    chopped fresh rosemary
  • milled pepper to taste


Preheat oven to 180 ºC. Gently ease skin away from flesh on one side of each chicken breast. Set aside. STUFFING: Mix cheese, butter, herbs and pepper together well. Carefully pat a liberal quantity of mixture under skin on each chicken breast. Season chicken and place on a baking sheet. Bake for 25 minutes, or until juices run clear when chicken is pierced with a skewer. Serve with baby potatoes and a tomato and spring onion salad.
