Chicken breasts stuffed with pesto

  • 4
    skinless chicken breasts
  • 60
    pesto of your choice
  • 20
    olive oil


Preheat oven to 180 ºC. Make a slit in the side of each chicken breast and stuff with 15 ml pesto. Wrap each breast tightly in aluminium foil and bake for 30 minutes. Allow to cool, unwrap and drizzle 5 ml olive oil over each breast. Serve chicken breasts with a lemon wedge and green salad, in a sandwich or in a pasta salad.
