Ingredients (12)

625.00 ml chicken — shredded
50.00 ml sultanas
2.00 onions — medium, chopped
250.00 ml mayonnaise
20.00 ml jam — smooth, apricot
10.00 ml lemon juice
66.00 g cream of chicken soup
10.00 ml curry powder
250.00 ml milk
3.00 ml dried mixed herbs
2.00 eggs — whisked
sea salt and freshly ground black pepper

Method:

Preheat the oven to 180 ºC (350 ºF) and spray a medium ovenproof dish with non-stick spray or grease well.
Gently mix the chicken, sultanas and onion and spoon into the ovenproof dish. Beat the remaining ingredients together and season with salt and pepper. Pour over the chicken end mix gently with a fork.
Bake in a preheated oven until set and golden brown (45-50 minutes). Serve with rice, peas and a salad.
Serves 4-5.
