Chicken baked in spicy yoghurt

Ingredients

    ml
    fruit chutney
  • 10
    ml
    grated fresh ginger, OR
  • 1
    fresh chilli, chopped, OR
  • 8
    chicken thighs
  • 5
    ml
    dried
  • 2
    cloves garlic, crushed
  • 10
    ml
    grated lemon zest
  • 125
    ml
    natural yoghurt
  • 7
    ml
    dried, crushed chillies
 

Method

35 to 45 minutes
 
Slash the chicken thighs diagonally and place them in a roasting tin.
Mix the remaining ingredients and spread over the chicken.
If you have time, allow to marinate for a while.
Bake in a preheated 160 °C oven for 35 to 45 minutes, or until cooked through.
Serve hot with rice and a salad or seasonal vegetables.

COOK's TIP
Use the same marinade and pour over chicken drumsticks. Braai over medium to low coals.
