Chicken bake with tortilla chips and cheese

10.00 chicken breast fillets
salt and freshly ground black pepper
1.00 Litres tomato salsa
fresh coriander — chopped
200.00 g tortilla chips
250.00 ml sour cream
100.00 g cheddar cheese — grated

Method:

Preheat the oven to 200 ºC (400 ºF). Season the chicken breast fillets with salt and pepper and fry in a little oil until brown on both sides. Arrange in a large, ovenproof dish. Pour over the tomato salsa (the dish may be prepared in advance to this step and frozen).
Defrost, cover with aluminium foil and bake until the chicken is heated through, about 20-30 minutes. Remove the aluminium foil, sprinkle with coriander leaves and tortilla chips, pour over the sour cream and sprinkle with Cheddar cheese. Bake another 10 minutes or until the cheese has melted. Serve hot.
Serves 8-10.
