Chicken and mushroom parcels

  • 6
    free range chicken breasts
  • 1
    punnet black mushrooms
  • 1
    punnet shitake mushrooms
  • 1
    punnet dried porcini mushrooms
  • 100
  • Verjuice or white wine
  • A bunch of time
  • Salt and pepper
  • 6
    cloves crushed garlic


Preheat the oven to 180 C.
Tear pieces of foil about 30cm in diameter.
Take the chicken breasts and place in the centre of the foil.
Put all the mushrooms in a bowl, add the garlic, thyme, salt and pepper and mix to combine.
Split the mixture between the portions.
Add a little knob of butter to each portion and a splash of Verjuice or white wine.
Close the packets well and place in the oven for 20 minutes or until the chicken is just done.
Open and serve with a fresh green salad.
