Ingredients (8)

3.00 courgette — finely grated
4.00 chicken breast fillets
sea salt and freshly ground black pepper
1.00 onion — finely chopped
250.00 ml cheddar cheese — finely grated
375.00 ml breadcrumbs — fresh
65.00 ml breadcrumbs — dried
30.00 ml oil

Method:

Place the grated courgettes in a colander placed over a mixing bowl and press with a wooden spoon to remove excess liquid.
Finely chop the chicken breasts and season generously with salt and freshly ground black pepper.
Mix the grated courgettes, chicken, onion, cheese and fresh breadcrumbs together and roll into eight balls. Flatten slightly and roll in the dried breadcrumbs.
Heat the oil in a pan and fry the burgers over medium heat for about eight minutes on each side until golden brown and done.
Drain on paper towelling and serve immediately on crispy buttered rolls piled with shredded cabbage or lettuce and tomato slices.
Top with garlic mayonnaise and serve with potato chips.
