Ingredients (9)

sunflower oil — use for stir frying
1.00 fresh chillies — seeded and chopped
2.00 garlic — cloves, unpeeled
1.00 onion — sliced
100.00 g cashew nuts — unsalted
8.00 chicken breast fillets — sliced
5.00 ml sugar
30.00 ml vinegar — white wine
125.00 ml fresh basil — sliced

Method:

Heat oil in a wok or a heavy-based frying pan.
When oil is almost smoking, add chilli and garlic and stir-fry for about 1 minute. Add onion and nuts and stir-fry for a further minute. Add chicken and toss to sear quickly on both sides.
Add remaining ingredients, except basil, and stir-fry for about 4 to 5 minutes, or until chicken is cooked.
Stir in basil and serve immediately with fragrant Thai or jasmine rice.
