Chicken and broccoli pies

    readymade puff pastry

    chicken breast fillets, cut into small chunks
  • 250
    broccoli florets
  • 20
    fresh thyme, finely chopped
  • 500
    readymade pepper or cheese sauce
  • 1
    large egg, lightly beaten

Heat half the butter in a saucepan and fry the chicken for two minutes until just cooked. Remove from the pan.
Heat remaining butter and stir-fry the broccoli until just tender.
Return the chicken to the pan and stir in the sauce and the thyme. Season to taste.
Spoon the mixture into individual dishes or one large dish. Allow to cool slightly.
Paint the outside rim of the bowls with a little of the egg.
Top with pastry, pushing onto the outside rims of the bowls.
Brush with egg and bake in a preheated 180 °C oven for 40 minutes, until puffed and golden.
VARIATION: Leave out the broccoli and add 250 g sliced, sautéed mushrooms instead.
