Ingredients (16)

8.00 chicken — pieces
10.00 ml chicken spice — to taste
100.00 ml olive oil — for frying
1.00 onions — large, roughly chopped
5.00 ml garlic — cloves, crushed
250.00 g button mushrooms — sliced
1.00 red pepper — diced
5.00 ml fresh oregano — chopped
1.00 sprig fresh rosemary
5.00 ml paprika
250.00 ml wine — dry white
250.00 ml stock — chicken
15.00 ml cornflour
250.00 ml sour cream
10.00 ml salt and freshly ground black pepper — to taste
125.00 g blue cheese

Method:

Season the chicken pieces with
the chicken spice. Heat the oil in
a large saucepan and fry the
chicken pieces until golden
brown and done.

Remove the
chicken and set aside. Add the
onion, garlic, mushrooms and
red pepper to the pan and sauté
for 10 minutes.

Add the herbs,
paprika, wine and stock and
boil, uncovered, to reduce by
two-thirds. Return the fried
chicken to the saucepan.

Blend
the cornflour with 30 ml of the
sour cream, stir the mixture into
the remaining sour cream and
stir it into the chicken mixture.

Heat through, season with salt
and pepper to taste and crumble the cheese on top.
