Chia breakfast pudding

Ingredients 3
  • 6
    level tablespoons chia seeds
  • 1
    340ml tin light coconut milk (or any alternative milk)
  • fresh fruit, coconut blossom sugar, or fruit and nut seed mix for the topping



Place the chia and milk in a glass jar, and stir until the chia seeds are evenly mixed into the milk (clumps can form).

Place in the fridge overnight.

Serve, topped with fresh fruit, coconut blossom sugar, or fruit and nut seed mix.

Serves 2 – 4, depending on portion size
