0.00 eggs — whites only, at room temperature
0.00 castor sugar
0.00 dates — finely chopped
0.00 sponge finger biscuits — broken
0.00 walnuts — or hazelnuts, toasted, chopped
0.00 Baking powder

Method:

Preheat oven to 160 °C and line 2 baking sheets with aluminium foil. Whisk the egg whites until stiff peaks form.
Add the sugar by the spoonful, beating until all the sugar is dissolved and the mixture is thick and shiny.
Fold in the dates, sponge fingers, nuts and baking powder.
Drop spoonfuls of the mixture onto the baking sheets or shape 2 circles.
Bake for 25 to 30 minutes or until pale brown.
Switch off the oven and leave the meringues in the oven to cool.
Serve with cream or ice cream.
