Ingredients (6)

100.00 g breadcrumbs — white
100.00 g castor sugar
400.00 ml milk
40.00 ml butter
3.00 eggs — large, seperated
400.00 g cherries — black tinned and drained

Method:

1. Mix breadcrumbs with 20 ml castor sugar.
2. Heat milk and butter in a saucepan until butter has melted. Pour over the breadcrumbs and leave to soak for 15 minutes.
3. Stir in egg yolks. Spoon mixture into a greased 1,5 litre ovenproof dish and bake in a preheated 170 ºC oven for 15 minutes, or until set and firm to the touch.
4. Remove from the oven and top with cherries.
5. Beat egg whites until they form stiff peaks. Add remaining sugar and beat until smooth and glossy. Spoon onto the cherries.
6. Return to the oven for 10 minutes or until meringue is golden. Serve warm with cream on the side, if desired.
