Cherries jubilee

  • 850
    black cherries in syrup, drained (reserve syrup)
  • 60
  • 60
    cherry liqueur
  • vanilla ice cream


1. Blend a small quantity of reserved syrup with the cornflour. Place remaining syrup in a saucepan and bring to the boil. 2. Pour the heated syrup on to the cornflour mixture and stir well. Return mixture to saucepan. 3. Place over medium heat and stir until mixture thickens and boils. Add cherries. Stir in cherry liqueur. 4. Place scoops of ice cream in individual serving bowls and top with hot cherries and sauce. Serve immediately.
