Cheesy bites

    slices white bread, crusts removed

    rashers bacon, finely chopped
  • butter
  • 250
    fresh button mushrooms, finely chopped
  • 1
    onion, finely chopped
  • 2
    eggs, beaten
  • 200
    cheese, grated


Preheat the oven to 180 ºC (350 ºF). Spray a 12-hollow muffin tin with non-stick spray. Flatten the slices of bread slightly with a rolling pin or with the palm of your hand. Line the hollows of the muffin tin with the flattened slices. Fry the bacon until done and remove from the pan using a slotted spoon. In the same pan, melt the butter and fry the mushrooms. Remove from the pan and add the onion. Sauté until tender. Mix the bacon, mushrooms and onion and spoon into the muffin tin hollows. Whisk the eggs well and mix with the cheese. Drop a spoonful of the egg mixture on top of the mushroom mixture in each muffin tin hollow. Bake for 10-15 minutes or until the egg has set. Serve lukewarm.
