Ingredients (11)

6.00 green peppers
12.00 ml butter
1.00 onion — chopped
2.00 garlic — cloves, crushed
350.00 g beef mince
125.00 ml digestive bran
400.00 g tomatoes — chopped
5.00 ml sugar
25.00 ml tomato paste
3.00 ml dried sage
200.00 g gouda cheese — cubed

Method:

1. Slice the stem end of the peppers, discard. Carefully remove seeds and membrane from peppers. Place in a large pot of boiling water, simmer uncovered for 2 minutes, rinse under cold water, drain well.
2. Heat the butter in a frying pan, add onion, garlic and mince, cook, stirring until the mince is well browned. Stir in the bran, tin of tomatoes, sugar and tomato paste. Bring to the boil, simmer uncovered for about 10 minutes, until the mixture has thickened. Stir in the sage and cool. Once cooled, add cheese.
3. Fill the peppers with the mince mixture, place in a shallow ovenproof dish. Cover and bake at 180 ºC for about 40 minutes or until the peppers are tender. Serve with a salad and wholewheat bread.
