Cheesy baked gnocchi

    tin chopped tomatoes
  • ½ cup of chicken stock
  • 2
    tsp brown sugar

    baby spinach, rinsed and drained

    cup ready-grated mozzarella


Fry the bacon until crisp, set aside on paper towel and then crumble into pieces. Sautè the garlic and onion in the olive oil in a medium saucepan until softened and then add the tomatoes, stock and sugar. Bring to the boil and simmer for 10 minutes. Cook the gnocchi according to the packet instructions (in a medium saucepan of salted boiling water for about 2 minutes or until they float to the top). Place them in an ovenproof dish, add the tomato sauce, bacon and spinach leaves and toss through. Sprinkle with cheese and bake under the grill until the mozzarella is melted, bubbling and golden brown.
