Ingredients (13)

15.00 ml fresh chillies — 573
1.00 onion — finely chopped
2.00 garlic — cloves, crushed
10.00 ml cumin
2.00 fresh chillies — chopped
1.00 pepper — green and red, chopped
125.00 ml sweetcorn
500.00 g beef mince — lean
25.00 ml tomato paste
125.00 ml breadcrumbs — fresh
2.00 eggs — large, beaten
8.00 cheese — sliced
chilli sauce

Method:

1. Place all ingredients except the cheese in a large bowl and mix with a wooden spoon until well combined.
2. Spoon one third of the mixture into a greased loaf tin. Layer 4 slices of the cheese over the mixture. Spoon another layer of the meat mixture over the cheese and cover with remaining cheese. Top with remaining meat mixture.
3. Bake in preheated 160 ºC oven for 1 hour. Remove from the oven and allow to stand for 10 minutes, then slice and serve with a chilli sauce and guacamole.
