Cheesy cauliflower macaroni

Ingredients (10)

400 g pasta — macaroni
1 onion — large, chopped
60 ml butter
60 ml flour
500 ml milk — low-fat
250 ml mature cheddar cheese — grated
1 cauliflower — florets
50 ml fresh parsley — chopped
200 ml breadcrumbs — fresh
100 ml parmesan cheese

Method:

Cook the macaroni according to the package instructions until al dente. Rinse and set aside. Fry the onion in the butter until glossy, stir in the flour and cook for 1 minute. Mix the milk in gradually until smooth, then simmer over moderate heat until thick. Season with salt, cayenne pepper and nutmeg, and stir in the cheddar cheese.

Steam the cauliflower. Mix the pasta, parsley, cauliflower and cheese sauce and spoon into a greased ovenproof dish. Sprinkle the breadcrumbs and parmesan over and serve, or bake for 20 minutes until golden brown.
