  • 250 g (1 tub) creamed cottage cheese
  • 125 ml cake flour
  • 100 ml sugar
  • 2 extra large eggs, separated
  • 10 ml custard powder
  • 250 ml milk
  • 1 ml almond essence
  • 30 ml lemon juice
  • cinnamon


Preheat the oven to 180 °C and grease a 22 cm pie dish with butter or non-stick spray.
Mix the cottage cheese, cake flour and sugar.
Beat the egg yolks, custard powder, milk and almond essence together and add to the cheese mixture.
Add the lemon juice and stir well to mix.
Whisk the egg whites until stiff peaks form and carefully fold into the mixture.
Bake for 30 minutes or until firm.
Remove from the oven and leave to cool to room temperature.
Sprinkle with cinnamon.
