Cheese straws

  • 500
    cake flour
  • 250
    butter, softened
  • 250
    Cheddar cheese, grated
  • 1
    jumbo egg

Preheat oven to 180 ºC. Place flour in a bowl and rub in butter with your fingertips until mixture resembles breadcrumbs. Stir in grated cheese. Beat egg and water and work into flour mixture with your fingertips to make a dough. Shape dough into a ball and roll out into a 30 x 24 cm rectangle. Cut lengthways into 12 strips, then fold into shapes, or leave cheese straws straight. Place on a greased baking sheet and bake for 20 minutes, or until golden. Remove from oven, allow to cool and serve, or store in an airtight tin for up to 1 week.
