Cheese scrolls

  • 250
    phyllo pastry sheets
  • 150
    cheese, refrigerated
  • fresh mint leaves
  • 1
    egg white, beaten (you may need more)
  • oil for deep frying


Cut sheets of phyllo in half, keep covered with a clean, damp tea towel.
Finely grate cheese and sprinkle over the halved sheets of phyllo.
Place two mint leaves on top, fold edges over and roll up into scroll shapes.
Seal edges with egg white and deep fry for 2 minutes or until golden brown.
