Cheese, salami and spinach strudel

  • 8
    sheets phyllo pastry
  • olive oil
  • 4
    slices mozzarella cheese
  • 15
    slices salami
  • 125
    tomato salsa
  • 6
    large spinach leaves, cleaned and finely shredded
  • 1
    egg, whisked
  • 20
    pitted olives, chopped


Preheat oven to 180 °C and lightly grease a baking sheet with olive oil.
Lightly oil each of the pastry sheets and stack on top of one another.
Arrange the cheese slices down the one long side of the pastry, about 5 cm from the edge.
Arrange the salami on top of the cheese and spread with the salsa.
Arrange the spinach on top and pour over the beaten egg.
Scatter the olives on top.
Roll up the pastry with the filling and tuck the ends of the pastry under the roll.
Place the roll on the baking sheet and lightly brush with more oil.
Bake for 30 minutes or until pale brown.
Slice and serve with a salad.
